Cod, Salmon and Bay Scallops in a rich and creamy sauce topped with a cheesy mashed potato topping.
Ingredients
For the mashed potato:3-4 pounds russet potatoes, peeled and cooked in boiling water until tender.3 tablespoons butter½ cup Milk1 cup shredded cheddar cheeseSalt & Pepper to tasteFor the filling:3 tablespoons butter3 tablespoons all-purpose-flour2 cups milk (I use 1 ¾ cup milk and ¼ cup heavy cream)2 teaspoons lemon zestSalt & Pepper to taste¼ teaspoon Accent (Optional)1 tablespoon Worcestershire Sauce (Optional)2 cloves garlic, minced1 Shallot, minced1 cup frozen peas and carrots (Optional)3-4 pounds of your favorite fish, cut into bite sized pieces if desired. (I used Cod/Salmon and Bay Scolopes).
Instructions
Preheat the oven to 375 degrees F. Generously butter a 9x12 baking dish.Add peeled and chopped potatoes to a large pan and cover with cold water, add salt to taste, bring to a boil and cook till tender, about ten minutes. Drain well and return to the pot or large bowl , add in 3 tablespoons butter, Salt & Pepper to taste and ½ cup milk, mash until smooth, add cheese and stir to combine. Set Aside.In a large saucepan over medium heat add 3 tablespoons butter and 3 tablespoons all-purpose-flour, whisk continuously until smooth and you notice a slight nutty aroma, about 2 minutes. Add the minced garlic and shallots and whisk until fragrant, about 30 seconds. Whisk in 1 cup milk and continue to whisk until it begins to thicken, whisk in remaining 1 cup milk or (¼ cup heavy cream and ¾ cup milk if using) Continue to whisk until thickened. Add vegetables if using and stir.Salt & Pepper both sides of the fish to taste. Add fish to the prepared baking dish, Pour sauce over the fish. Gently drop large spoonfuls of the mashed potatoes over the sauce and gently spread, covering as much of the top as you can. If desired, run a fork over to top to create a pattern. Bake in a preheated 375 degree F oven till sauce is bubbling and top is golden brown 40-50 minutes.
Addition Information
Use your favorite Seasoning/Old Bay Seasoning/Creole Seasoning/Seasoning Salt to taste. Cut your fish into bite sized pieces if desired.
